Week 1 – Understanding the Basics

Class Notes

The Purpose of Food:
  • Provide our bodies with energy
  • Provide our bodies with essential nutrients (nutrients we can not synthesize and must ingest)
  • Feed our gut bacteria
Impacts of our Food Choices:
  • Energy levels
  • Mental clarity
  • Emotional health
  • Immune system
  • Pain and inflammation
How to Maximize Nutrients:
  • Consume nutrient-dense foods closest to the producer and primary consumer level of the food chain. Food Web Diagram
  • Avoid ultra-processed foods that have the least amount of nutrition. 4 Food Categories
Minimize Toxins:
  • Man-made, such as pesticides, food preservatives, synthetic dyes, and ultra-processed food ingredients.
  • Lectins – “anti-nutrient” proteins made by plants and animals.
Happy Animals Make Healthy Food

Animals raised in stressful conditions caused by improper food and/or confinement will produce hormones that may harm the consumer. The healthiest food will come from animals raised in healthy environments consuming the food their bodies were designed to break down.

Week 2 – Camp Cooking

Why learn to camp-cook?

Camp-cooking forces you to be creative and resourceful.  If you learn to cook good, nutritious food in the harshest of conditions, then you will be able to cook in any condition.  Cooking with a stove is easy when you know how to cook without one.

What equipment don’t you have with camp-cooking?

Special considerations while camp-cooking
  • Water is a limited resource. 
  • Manage trash effectively.
  • Refrigeration is difficult. 
  • Equipment storage can be limited.
  • Access to power is limited or non-existent.

    • Use paper products that can be burned at your next campfire
    • Use grocery bags to collect waste and dispose of it at gas stations, fast food restaurants, parks, etc.
